Adam, have you seen the "Black Lagoon" series? It is little more adult than Cowboy Bebop, about a bunch of smuggling pirates in east asia. Not on the same awesome level as Bebop, but it is a great series that has kept my interest for a couple seasons. Look it up if you can (takes forever to get from Netflix, I think they only have one copy to lend out).
I haven't seen, or even heard of, this series. I'll have to hunt it down. I think I was spoiled by having Cowboy Bebop be the first anime I ever saw. Now nothing else can compare. But I'm willing to give Black Lagoon a shot. Thanks!
